Yellow Brick Road Farm’s Homemade Mozzarella Sticks

These are a family favorite and I love dissecting fast food to make it more from scratch and homegrown.

Homemade mozzarella sticks just because my youngest boy had a craving after we took the dog to the beach (we have the most beautiful beaches here in Barrington, Nova Scotia) Mommas of teenagers know bonding happens on their schedule, not yours, so when you find pockets of time, you have to take them.
Plus I love deconstructing what seems like fast food to show them how it can be made well: organic mozzarella sticks, homemade bread crumbs, fresh eggs, fresh herbs, organic flour, and lightly fried in our homemade pig lard. He may have only peeled the cheese sticks but we talked the whole time. Well, I was anyway. But if there is one thing I know about teenagers after 4 of them, they are listening even when they seem like they aren’t.

Here’s the technique :

Take a package of organic mozzarella cheese sticks , have child or teenager peel them and cut in two .

Heat your fat on stove (we use rendered lard from our pigs ) you can use canola oil, or shortening , whatever you are using .

Prepare three trays :one has one beaten egg, one has 1 cup bread crumbs and 1 tsp herbs of your choice (I like an Italian blend ) and one has 1 cup flour and 1/2 tsp salt and 1/4 tsp pepper.

Put on tray until you have all done. Using tongs, place 4 cheese sticks at a time gently in heated fat.

Dip cheese stick in egg , then in flour , THEN egg again, and finally then in breadcrumbs.

Using tongs rotate the cheesesticks and haul out after 30 sec and lightly browned.

Work quickly so you do not overcook or you will have a cheesey mess in your fat. Let rest on plate with napkin or paper towel. Serve with sour cream and salsa or marinara sauce . Enjoy !
