Griddled Banana Bread

Ingredients
  

  • 1/2 cup Butter
  • 1 cup organic cane sugar
  • 11/2 mashed banana
  • 2 cups all purpose flour
  • 1 tsp baking soda
For Grilling Bread
  • 1/2 banana chopped for garnish
  • maple syrup
  • 2 tbsp salted butter

Equipment

  • cast iron Frying Pan

Method
 

  1. Preheat the oven to 350 degrees. Grease one bread loaf pan and line with parchment paper to fit bottom. Grease paper.
  2. Cream butter, and sugar until smooth. Beat in eggs, then bananas. add flour and soda. Beat until just combined.
  3. Pour into prepared pan and bake at 350 degrees for about an hour, testing with a toothpick. Remove from pan and let cool.
  4. Using two day old Banana Bread, slather both sides with butter.
  5. Grill in a cast iron pan over medium heat, until bread is warm,brown and crusty and both sides.
  6. Serve with real maple syrup and chopped bananas.
