Old Fashioned Venison Mincemeat

I grew up with mincemeat. It was such a great way to preserve deer meat.

Tarts, pies or just warm and eaten with an spoon

We used to use an old fashioned grinder. I still use mine today.

Mincemeat

4 Ibs. venison meat, cooked and ground

10 tbsp. cinnamon

10 Ibs. apples

3 tbsp. mace

1 lb. suet, ground (beef suet preferred. Use 2lb if deer suet)

1  tbsp. pepper

2 tbsp. nutmeg

4 Ibs. sugar

Juice and rind of:

2 lemons

2 oranges

1 pt. cider vinegar

1 qt. Crosby molasses

1 qt. liquid, meat was boiled in

3 or 4 lbs. raisins

3 tbsp. cloves

Mix in order given, and cook slowly, stirring often, to keep from sticking, until apple is cooked. You may want to add more lemon, orange or vinegar, also spices. Makes 1 large roaster filled to the top. Freezes well.

I puréed this up to make the apples a little smoother texture as I didn’t chop them fine enough. But I wish you could smell this!
