Ranch Chicken Spaghetti

“You can’t be smart and hungry at the same time.”-unknown

Chicken spaghetti is one of our favorite quick meals here. I always have chicken in the fridge. Chicken pieces from a whole chicken that’s been cooked at some point in the week or hauled from the freezer. Or a cooked rotesserie chicken-whatever you got. I freeze a lot of cooked turkey and chicken for quick homemade soups and meals.
I put the noodles on to cook on one pot, then in another, I start with my homemade cream soup base recipe ( 1/4 cup butter melt then 1/4 cup flour let bubble for one minute then add 1 1/2 cups chicken stock , 3/4 cup milk and simmer till thickened )
Add some ranch dressing to it ( about 1/4 cup) and some Parmesan cheese ( 1/4 cup) and the cooked chicken. Add some dried or fresh basil. Make sure it’s warmed through , add spaghetti (I used ready made organic here) and tossed with salt and pepper. I serve it with diced fresh tomato, and a piece of garlic nann bread.

Here’s to being nourished and clever !

Love Jenn xx
