Aunt Judy’s Haystack Cookies

So when I can’t sleep past 4:00am , I bake. Weird but productive !

My aunt Judy was more like a sister to me than an aunt as we were only three years apart in age.

This morning I made my Aunt Judy’s haystack cookies. The secret to these not being dry or crumbly is to time the boil of the milk-sugar-butter mixture from the very first bubble .
2 cups sugar
1/2 cup butter (always real butter !),cubed
1/2 cup milk
Boil for two minutes over med-high heat in a large saucepan . Time from first bubble !
In a separate bowl, mix
2 cups oatmeal
2 cups coconut (sweetened flaked)
8 Tbsp cocoa
After removing milk mixture from heat, stir in oatmeal mixture and
5 tsp vanilla
and mix well. It will be a bit runny but still hold together when scooped .
Drop by spoon onto parchment paper and let set for approx 1 hour (we never can wait that long but you can try lol)
I double this recipe no problem , just keep the boiling time the same .


Thanks Aunt Judy for making these when we were kids. You’ve been gone three years now and I still think of you every day but especially when I make these.
