Fall Broccoli Salad

A great way to use up leftover bacon-should such a thing exist.

Typically thought of as a refreshing summer salad, I enjoy this salad so much more in the fall and winter months when broccoli is more in season.

Adding dried cranberries, red onions, pumpkin seeds and bacon are all further ways I designate this salad for fall. I rest my case.

Fall Broccoli Salad

A perfect mix of crunchy broccoli, onion and pumpkin seeds with a sweet tart treat of dried cranberries and the smokiness of bacon. Perfect for fall
Prep Time 15 minutes
Servings: 6
Course: Salad, Side Dish

Ingredients
  

  • 1 lg head broccoli
  • 1 small red onion
  • 1/4 cup pumpkin seeds
  • 1/2 cup dried cranberries
  • 2 slices cooked bacon
Dressing
  • 1/4 cup organic cane sugar
  • 1 cup mayonnaise, either homemade or store bought
  • 2 tbsps apple cider vinegar

Method
 

  1. Chop broccoli and onions and bacon and mix together with cranberries and pumpkin seeds.
  2. Mix dressing ingredients together and pour over broccoli mixture.Toss lightly till coated.
  3. Refrigerate for 30 minutes before serving.
