Dealing With The Freezer Tomatoes

Beautiful, even frozen

It’s a double glove kinda day for chores (that means it’s really really really cold) so I will start on my inside chore list.
An easy one for Sunday, one that can bubble away for hours and can be canned up later this afternoon. Tomatoes can store with the skins on whole , washed and just tossed in the freezer during busy summer days or when the harvest is just trickling in. Then on a cold snowy January day I can put the frozen tomatoes into a sink full of water.

The skins will slip right off, and I will dehydrate those to make tomato paste powder. The skinless tomatoes go into a pot and I simmer them down until almost all the water is gone and the sauce is thick and rich. To each 500 ml jar I add a 1/2 tsp of citric acid and 1/4 tsp of salt, then I’ll water bath can them. I like to leave it plain, because then I can do whatever I want to later on.


It’s the next best thing to fresh.
