Sourdough Beavertails -A Canadian treat
Makes 12
2 cups flour any kind (I used freshly milled spelt here but truly any flour goes )
1 tsp salt
2 tbsp olive oil
1/2 c water room temperature
1/2 c starter (any stage -I used discard here)
Topping
2 tbsp melted butter
2 tbsp organic cane sugar or maple sugar
1 tsp cinnamon

Mix flour, salt and olive oil together in a medium bowl.
In a large measuring cup, measure water and then add starter. Mix well.
Combine wet and dry ingredients and knead gently till smooth.(freshly milled dough benefits from a small 15 min rest before kneading)
Let sit 6-12 hours. I like to do this before bed and make in the morning for breakfast.
Divide into golf sized balls and roll as thin as possible.
Combine cinnamon and sugar together in a small bowl and set aside.
Cook in a dry preheated cast iron frying pan over med high heat (no oil or greasing) until bubbles form and they are browned, 30-60 seconds.
Flip then Spread cooked side with melted butter using a silicone brush.
Remove from heat and sprinkle generously with cinnamon sugar.
Serve warm. Great with hot cocoa. Enjoy!
