My Freshly Milled Flour Story

There is no going back once you taste the difference freshly milled makes.

Friends I have no skin in this game. I am not trying to sell you anything. Absolutely nothing.

About a year and a half ago, I decided to up my intake of whole grains. I have always enjoyed eating whole food but for some reason I hadn’t expanded on grains in depth except to eat multigrain bread. I came across a lady named Sue Becker, a food scientist, who talked about the miracle of whole grains.
I got mom to give me a grain mill attachment for my mixer for Christmas to try freshly milling my own grains at a low cost. I absolutely loved it. I honestly find it hard to put into words. Not only was it so much more delicious, but the health benefits just blew me away. It was a learning curve to bake and cook with, but easy to do.
I have upgraded to a counter top mill and have been known to be evangelical about it. I can’t help it. I have been freshly milling my own flour from various grains like spelt, red fife, kamut, hard wheat, soft wheat, and many more. I eat whole grains every day. About three months in, my hair got thicker, my spot of adult acne on my cheek disappeared, brain fog disappeared and my cracked feet healed. I had more energy.
I am perimenopausal and it is typical for iron stores to deplete. My iron had been low for years and I took OTC iron to try to correct it to no avail.

In January, I got my yearly bloodwork back. My iron and my stores are tripled what they were two year ago, and are finally where I need them to be to feel good. I felt it but it was nice to get the physical proof too. I fully attribute it to eating more whole grains and freshly milled flour.
Milling my own grains is a religious experience for me. The grains are such a gift from the creator and contain 40 of the 44 nutrients needed for life . Isn’t that amazing ? I feel so grateful to be able to do this just like people since the beginning of time have done.
