
This is one of our favorite dips. It’s fresh and addictive. I especially like it in the summer when the tomatoes, onions and corn are in season. Right now it is sadly frozen corn, thawed, grocery store tomatoes and onions but don’t worry it still tastes really good and is chock full of goodness.
- 3 tomatoes diced
- 1/2 red onion diced
- 1 1/2 cups frozen corn, thawed
- 1 can chickpeas, rinsed and drained
- 1 can black beans, rinsed and drained
- 1 bell pepper diced
- 1 jalapeño pepper diced very finely, seeds removed
Dressing
- 1/3 cup avocado or olive oil
- 2 Tbsp lime juice
- 2 Tbsp red wine vinegar
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp garlic powder
Combine tomatoes, onion, black beans, chickpeas, corn, bell pepper, jalapeño in a large bowl and toss.
In a separate bowl, whisk together dressing ingredients. Pour over other ingredients.
Toss and refrigerate till serving.
We eat this cowboy caviar with tortilla chips. It’s my oldest boy’s favorite and he will clean the whole bowl by himself. He’s my best eater anyway….don’t tell the others;)
